Thermoblock vs Boiler: How Your Machine Heats Water, and Why It Matters

A thermoblock flash-heats water on demand — ready in seconds, ideal for speed and small machines, but historically less temperature-stable. A boiler heats a reservoir — slower to warm up, steadier at temperature, and better for steam. Modern PID-controlled thermoblocks (Breville's Bambino line heats in 3 seconds) have closed most of the gap at the entry level.
Two ways to heat water
A thermoblock (or thermocoil) is a metal block with a channel through it; water heats as it flows past, like a tankless water heater. There is almost nothing to preheat, which is how machines like the Bambino Plus or De'Longhi Dedica are shot-ready in seconds and stay compact and light.
A boiler heats a standing tank of water — anywhere from a few hundred milliliters to over a liter. The whole vessel and the metal around it come up to temperature, which takes minutes (E61 machines want 20+), but the thermal mass then acts as a flywheel: temperature barely moves shot to shot.
What you feel in the cup and the pitcher
Cheap thermoblocks without good control run hot-cold-hot through a shot, which reads as unpredictable sourness or bitterness. A PID (a digital thermostat sampling many times a second) mostly fixes this, and it has trickled down to sub-$500 machines — one reason we flag PID control as a feature worth filtering for.
Steam is where boilers still clearly win. Texturing milk wants a sustained volume of steam, and a boiler holds that reserve; thermoblock steam tends to be thinner and slower, fine for one cappuccino, tedious for three. If your household is milk-drink heavy, weight steam performance above heat-up speed.
How to choose
Match the design to your morning. One or two espressos, small kitchen, no patience for warm-up: a PID thermoblock machine is genuinely the right call, not a compromise. Regular milk drinks or multiple back-to-back shots: get a proper boiler, and if the budget reaches the prosumer tier, that conversation becomes dual boiler versus heat exchanger.
